Juicy lamb meets creamy feta and a hit of black olive for bold, irresistible Mediterranean flavour.

Ingredients
- 300g lamb mince
- ¼ tsp dried oregano
- 1 garlic clove, minced
- Salt and freshly milled black pepper
- 2 burger buns of your choice
- 2–3 tbsp Opies Red Onion Chutney
- 40g feta cheese
- 5 Opies Black Pitted Olives, chopped
- 4 slices tomato
- Crisp lettuce
Method
- In a bowl, mix the lamb mince with oregano, garlic, and a pinch of salt and pepper.
- Divide into two portions and shape each into a ball. Flatten between lightly oiled parchment paper to form patties. Chill in the fridge while preparing other ingredients.
- Heat a griddle, frying pan, or BBQ to high. Cook the burgers for 4–5 minutes on each side until browned and cooked through.
- Lightly toast the insides of the burger buns.
- To assemble, spread the base of each bun with Opies Red Onion Chutney. Add the burger, then crumble over feta, sprinkle with chopped olives, add tomato slices and lettuce.
- Finish with another spoonful of chutney on the top bun and serve immediately.
