DeFine, Sandiway: The Kind of Place You Immediately Want to Return To

There are some restaurants where you leave already planning what you’ll order next time. DeFine in Sandiway is one of them.

Part restaurant, part deli and part wine shop, it manages that difficult balance of feeling special without ever feeling intimidating. Beautifully designed, warm and welcoming, it’s the sort of place that works equally well for a leisurely lunch, a date night or a long overdue catch-up with friends.

We visited for lunch when we were, somewhat reluctantly, embracing a temporary no-wine period. Looking back, that may have been a mistake.

Because wine is very much part of the DeFine experience.

The restaurant walls are lined with bottles, creating both a striking backdrop and a tempting invitation. Guests can choose a bottle directly from the shelves and enjoy it at their table for a modest corkage fee, while those wanting to sample a few different styles can choose from an excellent by-the-glass selection. The team clearly know their wine too, offering recommendations with genuine enthusiasm and absolutely no pretension.

The lunch menu is designed around sharing, which suits the relaxed atmosphere perfectly.

We started with Padron peppers, blistered and beautifully seasoned, alongside fresh bread from Bradwall Bakehouse served with Tuscan olive oil and balsamic vinegar. Simple? Yes. But also exactly the sort of dish you can’t stop reaching for.

The Scallops, Fennel & Smoked Almond Slaw with Blood Orange Puree was one of those deceptively simple dishes that manages to be both comforting and elegant, while the Tiger Prawns, Nduja Toastie and Wild Garlic Butter was standout, bold, buttery and packed with flavour, striking the perfect balance between comfort and sophistication.

Throughout the meal, there was a real confidence to the cooking. Nothing felt overcomplicated or overly styled. The ingredients were allowed to do the talking.

By the time we reached dessert, we were completely full and still attempting to maintain some restraint. Even so, the dessert menu was difficult to ignore. Marmalade cheesecake with rum and raisin caramel and dark chocolate mousse with coconut cream both sounded exactly like the sort of decisions we’d regret not making.

What really elevates DeFine, however, is the atmosphere.

During the day, the glass roof fills the restaurant with natural light, creating a calm and airy feel. As evening arrives, the space transforms into something altogether more intimate, with twinkling lights and a warm glow that feels perfect for lingering over another bottle of wine.

In fact, it reminded us a little of some of the restaurants we discovered in Cape Town years ago, where good food, great wine and relaxed hospitality came together effortlessly.

Before we’d even left, we were already discussing a return visit.

The sharing platters looked exceptional, particularly the rare breed steak and the lamb shoulder tagine, both seemingly designed for long evenings and good conversation.

DeFine feels like a real asset to Sandiway. Thoughtful without being fussy, sophisticated without being formal and exactly the sort of independent restaurant we’re always delighted to discover.

As we wandered back to the car, we found ourselves doing what we always do after a really good meal; talking about what we’d order next time. Which probably tells you everything you need to know.
