Pancake Day… Beyond Lemon & Sugar

Lemon and sugar will always have their place — nostalgic, simple and perfect in their own way. But Pancake Day is also a brilliant excuse to play a little.

To try something new, stretch the idea of what a pancake can be, and maybe stumble across a topping you’ll keep coming back to long after Shrove Tuesday has passed. If you’re ready to flip tradition on its head this year, here are a few ideas to elevate your pancake game.

Macaron-Style Pancakes

For something playful and a little indulgent, take inspiration from pâtisserie. Whisk a little cacao powder into your pancake batter, cook as usual, then sandwich two pancakes together with softly whipped cream or chocolate ganache. It’s fun, slightly theatrical, and perfect if Pancake Day feels like a dessert-first kind of evening.

Rhubarb Ripple Pancakes

Forced rhubarb is at its best right now, vibrant, sharp and glossy when gently stewed. Swirl a spoonful of the compote through mascarpone or thick Greek yoghurt, then pile it generously onto warm pancakes. The contrast between sweet and sharp makes this one feel light, seasonal and surprisingly elegant.

Savoury Brunch Pancakes

If sweet pancakes aren’t your thing (or you’re hosting a leisurely brunch), savoury stacks are always a win. Think fluffy American-style pancakes topped with crispy bacon, maple syrup and toasted pecans, or lean Scandinavian with smoked salmon, dill yoghurt and a squeeze of lemon. Pancakes don’t have to be dessert to feel like a treat.

Sometimes the simplest combinations are the most comforting. Warm pancakes topped with Cheshire honey, a spoonful of thick Greek yoghurt and softly roasted apples feel rustic, nourishing and perfectly in tune with the season. A plateful you’d happily make again on a slow Sunday morning.
