1. Cap Rocat, Mallorca

Rebuilt from a 19th-century fort, this award-winning resort has an outstanding setting above a cliff, overlooking the Bay of Palma. The hotel features two swimming pools, dining options and a stunning spa cut out of the sandstone walls, which was once intended for defence. The travelling military fort was transformed into a luxurious hideaway with large underground twisting passageways, designed by architect Antonio Obrador.

Two rooms and twenty-six suites from former military sites are available. Carved into the rock face of the peninsula where Cap Rocat is located, the Sentinels Cave Suites are a set of three remarkable suites that were formerly used as observation posts. These luxury rooms include plunge pools on their individual patios with unrestricted views of the sea.

2. Six Senses Ibiza Cave Royale, Spain

With a view of Xarraca Bay, Six Senses Ibiza provides Cave Suites and the exquisite Cave Royale, the resort’s most luxurious accommodation. This is one of the most desired rooms at the resort, with an enormous outdoor bathtub, a complete bar, a spacious indoor and outdoor living area and an enormous bathroom. For guests with a taste for music, the living area also features a hidden door that opens to the recording studio below.

The stunning Mythic Paros resort is a favourite on the Greek island of Paros. Modern luxury cave suites embedded into the Agia Irini hillside, this haven is an adult-only hideaway with a large double infinity pool and unparalleled sunset views.

The Cycladic-styled two-bedroom cave suite features warm stone, light-filled sliding doors, a patio covered in stone and distinctive bohemian textures. There is a single bed in the second bedroom, a living space with a sofa bed for extra guests and one bedroom with a queen bed and an attached bathroom with a rain shower. 4. Aquatio Cave Luxury, Italy

In Matera, Italy, atop the Sasso Caveoso Ridge, is the Aquatio Cave Luxury Hotel. Two vast open areas which were originally neighbourhoods from the ninth century, house the wellness centre, breakfast room, restaurant and reception. The highest section of the building has the cave chambers, which provide stunning views of the historic city and the Caveoso cliff.

The men of the Neolithic towns originally used the cave rooms as refuge. Modern, luxurious furniture adorn the 35 stone-walled rooms and suites, which offer access to the immense health spa and infinity pool carved right into the rock for visitors.
