Everyone loves a nibble and these homemade nuts are great to have in your stor cupboard, just in case...
Ingredients:
Makes 4 x 280ml jam jars but you can use smaller 45ml jars for favours
- 100g cashew nuts
- 120g pecan nuts
- 60g whole almonds
- 80g pumpkin seeds
- 1 tbsp sunflower seeds
- 3 tbsp sunflower oil
- 2 tbsp maple syrup
- 2 sprigs rosemary, leaves picked
- 2 tsp coarsely ground black pepper
- 1-2 tsp cayenne pepper
- 1 tsp sea salt
- 4 x 280ml/9oz jam jars, sterilised
Method:
- Preheat the oven to 170C
- In a large bowl mix the oil and syrup together. Add all the nuts and seeds and mix well.
- Line a large baking tray with baking paper and put the nut mix on in a single layer
- Put in the oven and for 15-17 minutes, stirring occasionally, until the nuts turn dark brown.
- Remove, stir in the pepper and cayenne, and add the salt. Leave to cool on the tray, stirring from time to time.
- Once cool, transfer to the jam jars, seal the lids and label.
- A lovely gift and also if you use tiny jars (45ml) they make lovely place settings/favours at a dinner party with names written on a tag.
How to sterilise jam jars.
Preheat the oven to 140C. Clean the jars and lids in hot soapy water, line them up on a baking tray and put them in the oven for 20 minutes. Allow to cool a little bit they must still be warm when the jam goes into them.
