When life gives you lemons, make lemon curd parfait...
Children will love helping you make this and they will also love eating it!
Ingredients:
Serves 8
- 510ml whipping or double cream
- 2 shop-bought meringue nests – the ones that are about 10 cm in diameter
- 1 x 375g jar of lemon curd
- Grated zest of 1 large lemon
- 9 x 19cm loaf tin, lined with cling film
Method:
STEP ONE: Take a long piece of cling film, lay it across the loaf tin and then push it into the corners so it lines the tin. Leave the ends hanging over the sides.
STEP TWO: In a large mixing bowl, whisk the cream until soft and thick, being careful not to over whip it.
STEP THREE: Next add the lemon curd and lemon zest and stir gently to mix.
STEP FOUR: Crush the meringue into the bowl (here’s where the kids love helping out) with the cream and lemon curd and then gently mix together.
STEP FIVE: Tip the mixture into the lined container, fold the sides of the cling film over the top and freeze until solid – at least 4 hours or overnight.
STEP SIX: To serve, lift the parfait out of the loaf tin using the cling film and put on a serving dish. Place in the fridge for 15 minutes to soften a little then cut into slices and serve. It would be lovely with some fresh berries or seasonal fruit.
Hints & tips:
Orange curd works just as well as lemon.
This will last in the freezer for about 1 month.
