Our favourite summer cooler

It's hot, hot, hot. The perfect time to introduce you to our favourite summer cooler

Ingredients (serves 2)

  • A handful of mint, approx. 10 sprigs
  • Half a cucumber, peeled and cut into cubes (plus some extra slices for garnish)
  • Two scoops of ice
  • The juice of 1 lemon
  • 100ml of elderflower cordial
  • Two shots of gin, if using
  • Soda water

Prep time: 10 minutes

Method:

STEP1: Scrunch (technical term!) up the mint so that it breaks and releases the oils and add to a cocktail shaker. A large jar will also work perfectly well.

STEP2: Add the cubed cucumber and muddle for a minute or so. Muddling gently releases a more fabulous flavour and if you don’t have a muddler to hand, the end of a wooden spoon or a rolling pin works just as well.

STEP3: Add some ice cubes (approx. 4 depending on the temperature), lemon juice, and elderflower cordial. Also, add the gin if using.

STEP4: Shake like a mad thing for a minute or two. Channel your inner Tom Cruise in Cocktail.

STEP5: Strain into two glasses filled with more ice and cucumber slices or ribbons. Top to taste with soda water and serve.
